Brother Jules' Roasted Potatoes

Comfort food, made simply delicious.                            oven 350

2 lbs. washed and 1/2" cubed potatoes

2 tbsp Butter

2 tbsp oil oil

2 cloves garlic

salt and pepper

1/2  fresh basil, minced fine or tsp dried

Jules warms his oven and a glass roasting pan while he preps and chops.  When the pan is pretty hot, he takes it out to stove top and adds the butter and oil, the garlic, salt and pepper and the basil. It smells magnificent!

Next, the potatoes are added and stirred around until well coated. He covers the pan with foil for the first 45 minutes or so, then stirs the potatoes and pops them back in, no foil, so the potatoes can brown. 

Swop the basil for other herbs you love; parsley, oregano......rosemary!
