Chocolate Chip Zucchini Bread

350 degrees / 55 minutes 

Pre heat the oven. Prep the bread pan or square baking dish with cooking spray and line side to side with parchment paper for easy removal. 

Wet Ingredients:

2 eggs

1 c sugar

1/2 c vegetable oil

1 tsp vanilla

1 cup shredded zucchini, skin on

Dry Ingredients:

1 c flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt


1/2 c chocolate chips (I use small)

tsp flour

Mix these in a bowl and place aside for later. The flour keeps the chips elevated in the dough.

Mix wet ingredients in bowl 1, larger

Mix dry ingredients in bowl 2

Slowly add the dry to the wet and mix well.  Add in chips with a wooden spoon or utensil.

Bake in the center of the oven until the center springs back when pressed gently.
