P's Cool Corn Salad

Simply refreshing!

5-6 ears sweet corn, shucked and cooked 2 minutes in boiling water, then allowed to cool and cut from the cob

small red onion, diced

10-15 grape or cherry tomatoes, quartered

7/8 basil leaves, sliced

1/4 c. red wine or apple cider vinegar

1/4 c. olive oil

salt and pepper to taste

Just assemble and chill for a few hours before serving.  Summer in a bowl!
